Ingredients

  • 2 steaks sirloin or ribeye, room temperature
  • 1 pound baby potatoes halved and parboiled
  • 3 tablespoons butter
  • 3 cloves garlic smashed
  • fresh rosemary or thyme a few sprigs
  • salt and pepper to taste

Method

  1. Parboil the halved potatoes in salted water for 8 to 10 minutes until just fork-tender, then drain well.
  2. Season the steaks generously with salt and pepper.
  3. Heat a heavy skillet over high heat and sear the steaks for 3 to 4 minutes per side, then remove and let rest.
  4. Add the butter, garlic, and herbs to the same pan, then add the parboiled potatoes.
  5. Cook the potatoes for 6 to 8 minutes, tossing occasionally, until golden and coated in the garlic butter.
  6. Slice the steak against the grain and serve alongside the potatoes, spooning any extra pan butter over the top.
