Budget Ground Beef and Rice Skillet

A one-pan ground beef and rice skillet that feeds a family for under $10.

Ingredients
  

  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup uncooked rice
  • 2 cups beef broth
  • 1 can diced tomatoes 14.5 ounces
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Shredded cheese for topping optional

Method
 

  1. Brown the beef: In a large skillet over medium-high heat, cook the ground beef with the onion and garlic until the beef is browned and the onion is soft, about 6 to 8 minutes. Drain excess fat.
  2. Add the rice and liquid: Stir in the rice, beef broth, diced tomatoes, paprika, salt, and pepper, scraping up any browned bits from the bottom of the pan.
  3. Simmer: Bring to a simmer, then cover and reduce heat to low. Cook for 18 to 20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Top and serve: Sprinkle with shredded cheese if using, cover for 2 minutes to melt, then serve warm.
