Ingredients

  • 2 medium sweet potatoes about 1 pound (450 g)
  • 1 tablespoon cornstarch
  • 1 tablespoon olive or avocado oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt added after cooking

Equipment

  • Air fryer
  • Large mixing bowl
  • Cutting board and chef's knife

Method

  1. Scrub the sweet potatoes (peeling is optional). Cut them into sticks about 1/4 inch (6 mm) thick and 3 to 4 inches long, keeping them the same size.
  2. For the crispiest fries, soak the cut potatoes in cold water for 20 to 30 minutes to remove extra starch, then drain.
  3. Spread the fries on a clean towel and pat them completely dry.
  4. In a large bowl, toss the fries with the cornstarch until lightly coated, then add the oil, garlic powder, smoked paprika and pepper and toss again.
  5. Preheat the air fryer to 400°F (200°C). Arrange the fries in a single layer with space between them. Cook for 12 to 15 minutes, shaking the basket every 5 minutes, until golden and crisp at the edges. Cook in batches if needed.
  6. Sprinkle with salt right away. Let the fries rest in the basket or on a rack for 2 minutes so they crisp up even more, then serve hot.

Notes

Soaking time is optional and not included in the total time. Air fryers vary, so start checking at 10 minutes because the natural sugar in sweet potatoes can burn quickly. Nutrition is an estimate per serving.
